Todd's Grilled Chicken with Black Bean Salsa

1 tsp taco seasoning
3 Tbsp lime juice
2 15 oz cans black beans, rinsed and drained
1 14 oz can diced tomatoes, drained
1 Tbsp chopped jalapeño, seeded
3 green onions, chopped
2 tsp cilantro
1 clove garlic, minced
1/2 cup sour cream
1/4 cup mayonnaise
1/4 cup Todd’s Curry Sauce
6 boneless, skinless chicken breasts
1 Tbsp olive oil
2 Tbsp taco seasoning
In a medium bowl, combine the taco seasoning and lime juice. Add the black beans, diced tomatoes, and jalapeño. Mix well, cover, and refrigerate until ready to serve.
In a small bowl, combine the green onions, cilantro, garlic, sour cream, mayonnaise, and Todd’s Curry Sauce. Mix until smooth and well combined. Cover and refrigerate until ready to serve.
Preheat the grill to medium-high heat.
Lightly brush the chicken breasts with olive oil and sprinkle evenly with taco seasoning.
Grill the chicken until fully cooked and the internal temperature reaches 165°F.
Slice the grilled chicken into strips and spoon Todd’s Creamy Curry Sauce over the top.
Serve with Black Bean Salsa on the side.
