1 stick butter
1/2 cup onion, diced
3 cloves garlic, minced
1/2 tsp tarragon
1 tsp parsley
1 tsp chervil
1 cup bread crumbs
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp nutmeg
1/2 tsp thyme
1/4 tsp mace
2 lbs shrimp, peeled and deveined, tails left on
2 Tbsp olive oil
1/2 cup dry sherry
1/4 cup Todd’s Curry Sauce
1/2 cup Parmesan cheese
Preheat oven to 350°F.
Melt butter in a skillet over medium heat. Add onion, garlic, tarragon, parsley, chervil, and bread crumbs. Stir until well combined. Add salt, pepper, nutmeg, thyme, and mace. Remove from heat and set aside.
In a separate skillet, heat olive oil over medium-high heat. Add shrimp and dry sherry and sauté for about 2 minutes.
Reduce heat to low and add 1/4 cup Todd’s Curry Sauce. Toss gently until the shrimp are evenly coated.
Transfer the shrimp to individual baking dishes or a lightly greased baking dish. Spoon the seasoned bread crumb mixture evenly over the shrimp and sprinkle Parmesan cheese over the top.
Bake at 350°F for 15 minutes, or until the shrimp are cooked through and the topping is golden.
